Root Beer Cookies Recipe

Description:
These cookies are amazing!!!! I love them! They are easy to make, and even easier to eat. Be careful that you don't eat them all yourself in one afternoon. It's always a surprise to bite into one and realize that they really do taste like rootbeer!

Ingredients:
For cookies:
1 cup packed brown sugar
1/2 cup butter
1 egg
1/4 cup buttermilk (or 1 tsp vinegar & the rest milk)
1 tsp rootbeer concentrate
2 cups flour
1/2 tsp baking soda
1/2 tsp salt

For Frosting:
2 cups powdered sugar
1/3 cup butter, melted
2 Tbsp hot water
1 tsp rootbeer concentrate

Directions:
For cookies:
Mix brown sugar, butter, and egg until fluffy. Stir in buttermilk & rootbeer concentrate. Add flour, baking soda and salt and mix until smooth. Cover and refrigerate for 1 hour.Drop by rounded tablespoons onto cookie sheet, or roll into one inch balls, then bake for 6-8 at 375 degrees. Remove from cookie sheets and cool on wire rack until cool. Be sure to wait long enough for the cookies to cool before frosting, otherwise the frosting will melt off the sides.

For Frosting:
Combine all ingredients and stir together until smooth. Refrigerate until needed for frosting cookies.
